Quinoa

Quinoa

For dinner last week we went to "The Next Door" a restaurant in downtown Loveland. The entree I had was plated on a bed of quinoa. In the past, we have disliked quinoa, but we had always had it on its own. I was curious to make it again but have it as a side item and not as the main dish. So this evening, I made roasted chicken with brussels sprouts and served it on quinoa. It was good, but next time I going to use less water to cook the quinoa.
